White pepper is pepper which has been made from the dried insides of the fruits of the pepper plant.White Pepper comes from berries that are picked at full ripeness then soaked in water approximately one week and leading to fermentation. The outer layer is then removed. This gives white pepper a slightly different / softer flavour than black pepper, it lacks the flavour compounds present in the outer layer of the drupe.
